ampalaya & tausi con carne

i cooked ampalaya guisado yesterday for dinner and mactched it with fried bangus. yum! i just used one piece of the ampalaya because it was big. so today, i had to cook the other piece for it to not to go to waste. never mind if it's ampalaya for 2 days in a row!

so, i bought beef and black beans to complete my ingredients.

what i used

  • 1 pc sliced and seeded big ampalaya
  • half kilo beef strips
  • 1/3 cup oyster sauce
  • 3 tablespoon black beans or tausi
  • soy sauce to taste
  • dash o pepper
  • 1 cup water
  • onion
  • garlic

how i did it

  1. Marinade the beef in oyster sauce for 30 min to 1 hour or more
  2. In a pan, heat the oil then saute the garlic and onion
  3. Add the beef strips
  4. When browned, add the water and simmer until beef is tender
  5. Add the ampalaya and tausi
  6. Add the seasonings
  7. Simmer until amplaya is cooked
  8. Adjust seasoning if needed

TIP: To reduce the bitterness of ampalaya, soak it for a few minutes in salted water.
